Raffles Courtyard Teams Up With FatFuku to Present Outstanding Modern Peranakan Dishes

If you still haven't scored a highly-coveted seat at the table of FatFuku (Annette Tan), you might find yourself dancing to the news of her signature dishes making an appearance at Raffles Courtyard's second installation of collaborations with private dining chefs. Phase 2 Heightened Alert definitely dampened all our spirits, and FatFuku's exciting collaboration with Raffles Courtyard was put on a semi-hold, as a few of her dishes were made available for delivery via Raffles Grab and Go. Now that the restrictions have been gently lifted, and we can dine out in a small party of 2, it's time to make a reservation at Raffles Courtyard, because trust me, you wouldn't want to miss what FatFuku has in store. And you only have a little shy of 2 weeks (till 2 July) to snag a taste of Annette's inspiring and impressive modern takes on traditional Peranakan family recipes.

 fatfuku_raffles_hotel_singapore FatFuku's Mee Siam Rosti ($18), which was an absolutely delish rendition of her signature crispy mee siam, completely stole the show. Two portions of this solid ensemble is just not enough!! Served in a metal jug that's probably older than you and me is a robust and thick Nonya-style mee siam gravy laced with a hit of spice. Pour the gravy slowly over the adorable parcels of potato pancakes, fresh crunchy prawn and quail egg sambal, and dress them with a light squeeze of lime and you're all set for an umami bomb! I love the touch of zest which lifted the punchy flavours of the gravy, and the crisp rosti won my heart. The combination swept me off my feet — so, so, delicious. When I had the chance to meet Annette as she made her rounds to meet her fans (aka me), I told her that I wish I could have more of the Mee Siam Rosti! It truly was a stunner!

The Nasi Lemak Buah Keluak with Achar($15) was neatly wrapped in a banana leaf, offering a cheeky peek of what's hidden underneath. On a bed of fragrant and well-cooked rice lies a blanket of buah keluak sambal with minced prawns and pork. This might be my favourite rendition of buah keluak to date. What I like most about this dish was how the strong flavours of buah keluak were brilliantly refined to complement and accentuate the sweetness and fragrance of the coconut rice. The two elements shone brightly both individually and collectively.

Annette's Pandan Kueh Koh Swee($7) was just perfection. I was working my way through them extremely slowly because they were amazing! The distinct pandan fragrance was strong and captivating, and the kueh, which had just the right amount of sweetness, was soft and firm. The coconut shavings added some texture and injected a lovely flavour to the enthralling morsels. You might not believe this, but I have been thinking and dreaming of this kueh koh swee really often since I tried it more than a month ago. I will definitely be back for them before this exclusive collaboration ends! Never thought I would be a lover of kueh, but this definitely took me by surprise, and has changed me(for the better) forever!

Round off the meal with an adorable cone of Roasted Banana Ice Cream with Gula Melaka Syrup ($5). The banana ice cream had a thicker texture, and was a tad heavier than what I'm used to, but it was satisfying nonetheless! I would recommend getting the FatFuku Bundle($39) which comprises all 4 dishes mentioned above. You might be tempted, or should I say you would be tempted, to get a second portion of the Mee Siam Rosti.. and all I can say is... go for it!

This collaboration between Raffles Courtyard and FatFuku runs daily till 2 July (from 3pm-9pm). Come by on Wednesday between 6pm-8pm to meet Annette, and catch the famed Raffles Courtyard Happy Hour(5pm-8pm daily)!

You can still enjoy the usual sumptuous fare available at Raffles Courtyard during the duration of this collaboration with FatFuku, and future installations of collaborations with private dining chefs. If you haven't made a reservation, it's time to do so! Fastest fingers first!
