Ginza Sushi Ichi - Best Michelin-Starred Sushi Omakase in Singapore
One-Michelin-Starred Ginza Sushi Ichi at Singapore Marriott Tang Plaza Hotel might possibly offer the best sushi omakase in Singapore. The esteemed restaurant offers two types of omakase for dinner (starting from $220++). I usually go for sushi omakase as I'm a crazy huge fan of sushi, and I absolutely love Japanese rice! Walking into a Michelin-starred establishment, I had my expectations and I was really hoping that Ginza Sushi Ichi, an offshoot of the award-winning restaurant in Tokyo, will exceed my expectations. "Did they?" You might ask. Well, they certainly did.
The seafood was pristine, fresh and just beautiful. Each piece of seafood was skillfully sliced and prepared, and placed on top of just the perfect portion of delicious sushi rice.
I always look forward to the akami, chutoro, and otoro. It's probably weird but when I was in Japan, I would buy entire boxes of fresh otoro and eat them out of the box. That's how much I love otoro! The cuts of tuna here at Ginza Sushi Ichi were just gorgeous. They were full of flavour and every bite was a taste of heaven.
The otoro was just incredible. It was so fatty and the entire piece melted so slowly in my mouth. I chewed really slowly so that I could relish every bit of it — the juices that oozed out, that intense characteristic flavour of otoro, and that unparalleled texture. This was perfection!
Another highlight would, of course, be the uni ikura bowl! Back when I was in Japan, I would buy boxes of bafun uni and just dig into them with a spoon. Even in Singapore, I sometimes buy uni to make my own uni roll and rice bowl at home. So I was filled with anticipation as I watched the chef masterfully prepare each little bowl of pure goodness. Before I started on the bowl, I already wished that it would be a bottomless bowl that never finishes. I already felt sad at the thought that good things always come to an end! So, I really took my time with this bowl, making sure that I enjoyed every mouthful to the fullest. So good!
The meal ended on a simple and refreshing note with a fruit jelly concoction.
Service was pretty good! When I called to make a reservation, I said I was going for the omakase. I meant Omakase Nigiri which was stated on the menu, but when I got there, the server said we were booked for the chef's omakase. I clarified that I was going for the omakase nigiri, and the staff insisted that omakase refers to Chef's Omakase.. But... The chefs very kindly agreed to change our meal to the sushi omakase so we were very thankful. So make sure you state which omakase you're going for to avoid confusion! It's double the price for the chef's omakase and there are more cooked dishes than sushi.
Initially, I thought I would leave the restaurant not fully satisfied. I thought I would need to go grab something else to eat. I've left a couple of omakase restaurants feeling that way, and I thought it might be the same here, because the chef started dishing out the tuna sushi quite early into the meal. But I guess they have their own sequence of dishes to ensure that diners experience the sushi in the best way possible. I was pretty full at the end of the meal and I thoroughly enjoyed my dinner here! Will highly recommend their sushi omakase, and I'll definitely be back!
