Park Hotel Alexandra - A Spanish-Inspired Christmas Feast with Delish Roasts

Park Hotel Alexandra brings you a Spanish-inspired Christmas this December. New Executive Chef, Ian Hioe, and his team are excited to present a myriad of classic Christmas dishes with a splash of Spanish flair. Not only is The Carvery all dressed up and ready for Navidad, gorgeous poolside bar, Aqua Luna, and resident coffee haunt, The Coffee Belt, are also prepped to surprise guests with a Spanish take on popular beverages.

Aqua Luna spotlights Spain’s national alcoholic beverage - Sangria. A refreshing White Sangria awaits at the hotel’s breezy bar. Order two glasses of White Sangria for only $28.80 and receive a complimentary snack of either Spanish Style Garlic Prawns (Gambas al Ajillo) or a Charcuterie Platter (Iberico Ham and Chorizo); both served with a side of Wood-Fired Bread. 

At The Coffee Belt, an Iced Spanish Coffee ($8) with Dark Rum and crushed turron bits (Spanish nougat) might just be the perfect perk-me-up.

Located on level 7, The Carvery is renowned for its indulgent meat buffet that boasts of perfectly-executed roasts. They also have fresh seafood on ice which will please the palates of diners who love their shellfish and crustaceans.

Delectable delights such as Iberico Pork Belly Porchetta stuffed with Chorizo and Apple, Spit-roasted Chicken with Orange and Rosemary, and 28-Day Dry Aged U S Black Angus Prime Rib (weekends only) are the stars of the show. You will find yourself going back repeatedly for more servings of the delicious meats.  

Guests dining at The Carvery on the eves of and on public holidays (Christmas and New Year’s) have the added bonus of feasting on a whole Spanish Suckling Pig.

I'm a huge fan of their roast beef, which is always so tender and succulent. No matter what beef they're using, the final product never fails to dazzle. The consistency in the quality and taste of their meats is highly commendable, and the beef is always my favourite roast of all that is on offer.

This time round, however, I'm actually more in love with the Iberico Pork Belly Porchetta than anything else. The skin of the pork belly was incredibly crispy, and such a joy to bite into. What's even better was the meat, which was juicy beyond imagination. Every bite was like a party in my mouth! The apple stuffing was really tasty too. This was truly exceptional, and left a really deep impression. This is, no doubt, the best roast pork that I've ever tasted.

Other dishes that might tickle your fancy include Roast Turkey, Catalan Seafood Stew, Buttered Brussel Sprouts, Parsnips and Carrots, Red Mullet Fish with Mojo Verde, Squid and Olive Salad, Sukalki Beef Ragu, and a Turron Trifle.

Supposed to bring a little something to a gathering? The Spit-Roasted Chicken with Orange and Rosemary ($38+ / $68+ with a bottle of wine) is the ideal addition to any party. Each bird is approximately 1.8kg and can feed up to six diners. Every order comes complete with roasted seasonal vegetables such as brussel sprouts, carrots and yellow squash, as well as patatas bravas.

Specially for Christmas Eve Dinner and Christmas Day, The Carvery will echo with the angelic voices of carollers as they fill the air with classic Christmas songs.
