Ele-CITRUS-fying Lemon Tarts & 8 New Classic Treats @ Tiong Bahru Bakery
The classic lemon tart at Tiong Bahru Bakery now comes in three levels of sourness and I must say that its the best news I've heard in awhile. I've always loved lemon tarts but most of the tarts out there are way too sour for me. I love a refreshing kick of zingy-ness anytime but I always prefer more sweet than sour.
The newly rolled-out tarts are great because there's now a lemon tart for everyone! Level one sees an impeccable tart base filled with a creamy filling that is largely sweet with soft touches of tanginess. Level two (my favourite) was well-balanced with almost equal parts sweet and sour. Level three got me scrunching up my face and I would recommend it for those who truly enjoy very zesty treats.
On top of the lemon tarts, the dessert selection welcomes eight new additions crafted with top quality flour, butter and chocolate imported from France.
The Berries Tart ($8.50) is a delicate ensemble of homemade mixed berry jam, pistachio mousse, fresh raspberries and a white chocolate brushed sable breton biscuit. While this isn't a typical dessert that I will order due to the presence of berries, I enjoyed the sable breton base and secretly wished for a more intense pistachio flavour in the mousse.
They weren't kidding when they said that the chocolate tart is extremely rich. Here we have a superbly luscious and smooth dark chocolate ganache atop a crisp sugar dough base with an adorable chocolate truffle crowning it all. The Chocolate Tart ($7.50) can definitely satisfy a chocolate craving but it might take two to finish the decadent tart.
I'm quite critical when it comes to brownies. They are usually too moist, too dry, too hard or too crumbly but this is one brownie that pleasantly surprised me. Made with dark chocolate, the Brownie ($6) has a dense and mildly sticky core encased within a crisp crust. Basically, it was baked to perfection. That stunning crust says alot about the baking techniques and control of temperature. Complemented with added crunch and a light nutty bitterness from the pecans, this is definitely one of the better brownies I've had. Unassuming, unpretentious, but so good. Appearances are deceiving, they say. Well, indeed.
Chocolate, Vanilla or Coffee, which will you choose? The Chocolate Eclair ($6.50) has a coat of glistening chocolate ganache and is filled with dark chocolate cream while the Vanilla Eclair ($6.50) sees a firm and springy choux pastry wrapped around a generous body of vanilla cream with a hat of Vanilla Chantilly cream and a white chocolate strip. Lastly, piped with espresso cream is the Coffee Eclair($6.50) painted with a coffee glaze. I like them all but if I had to pick one, chocolate for me please.
