With its high ceiling, carpeted floor, pretty chandeliers, leather chairs and velvet sofas, Brasserie Les Saveurs exudes a posh ambience without being over the top.

Brasserie Les Saveurs is the signature restaurant of St Regis and they have recently launched a full buffet experience for lunch and a semi-buffet experience for dinner. The dishes that we tried during this tasting session are available on the ala carte menu for both lunch and dinner

Amuse Bouche
A surprise dish to kickstart the meal. I was pleasantly surprised by how good this was. A creamy and foamy soup with a unique texture and intense flavours. Extremely savoury and pleasant to the palate. The chunk of fat foie gras melted so delicately in my mouth and I tried really hard not to smile like an fool while I was savouring it. Topped off with a grilled juicy prawn, this was undoubtedly one of the best starts to a meal I've ever had!

Salade Nicoise - $36
Black-peppered-seared yellow fin tuna, mesclun leaves, quail eggs, marinated anchovies, green beans and Kalamata Olives

The dressing of the Salade Nicoise is lighter and is slightly different from the classic Salade Nicoise which is usually prepared with a heavier and richer dressing. The numerous ingredients that have been incorporated make this refreshing salad a really delicious one

Fisherman's seafood stew slow-simmered with fennel and saffron, served with crusty bread and rouille

The seafood stew at Brasserie Les Saveurs is a lighter rendition of the classic dish. The soup attempted to capture the different flavours of the fresh ingredients and a taste of the sea but it did not fulfill that completely

A concoction of garlic, mayonnaise and saffron, the rouille was extremely palatable and delightful with its creamy and smooth texture and unique taste. Usually served as a garnish to fish soup, the rouille was so good that it could be enjoyed on its own. Secretly wishing that I could have a jar of it!

Le Homard Thermidor - $75
Boston Lobster flamed with cognac, mushroom bechamel sauce, and gratinee gruyere

Where do I begin? The rich and creamy mushroom sauce or the layer of melted cheese or the juicy, fleshy and sweet lobster meat? The claws of the Boston Lobster were dipped in tempura batter and fried before the rest of it was baked with mushroom and cheese. This dish was flawlessly executed and we couldn't stop raving about how good it was!

This was so perfect. Drizzled with a savoury sauce and served with a side of horseradish sauce, the prime rib steak was so tender and juicy and every bite was simply, divine

Le Gateau A La Banane - $14
Melt in your mouth banana mousse cake paired with a scoop of banana and ginger icecream, accompanied with apricot compote and mango salsa. Special attention has been dedicated to keeping the dessert cold by serving it on a cold plate. The fragrant sesame cracker was an interesting contrast to the flavours and textures on the plate. I could hardly taste the ginger in the icecream though.

An amazing lunch with great company in a beautiful setting. There's no better start to a day than this.
